SALINE, MI -- Customers are met with huge stained-glass windows that serve as a reminder the building used to be a church when they walk into Salt Springs Brewery.

In the seven years it’s been open, Mark Zadvinskis, Ron Schofield and Ed Brosius have transformed the 120-year-old space, while making sure to salvage the building’s history when they can.

After years of hard work, Zadvinskis said the microbrewery and restaurant brings in people from not only Saline, but surrounding cities with its large assortment of beers and its menu filled with “approachable but worldly” dishes.

“Just as the stained glass is full of colors, so is our food and our beers,” Zadvinskis said. “We really kind of had to rise to the level of this building to make it all match (and offer) the same level and caliber of products that the space deserves.”

Although its menu changes two to three times a year, Zadvinskis said there are some go-to dishes for customers including Brussel sprouts, pulled pork and Korean BBQ Short Rib.

“We saw a void (in Saline) ... so our menu is a response to a necessity from a community that was missing this type of food,” Zadvinskis said.

The brewery smokes meats in its on-site smoker including wings, which are then tossed in either barbecue, hot wing or Korean barbecue sauce. Zadvinskis said his favorite is what he calls “Mark’s way” where he mixes the hot wing and Korean barbecue sauces together.

Another fan favorite dish is the restaurant’s truffle fries made with Kennebec fries, parmesan, herbs, black salt and black truffle aioli that are hand cut and made fresh daily.

The brewery even has options for vegans and vegetarians, including its tofu sandwich that Zadvinskis said he had to rename “The Incredibly Tasty Tofu Sandwich.” This dish features crispy tofu, thinly cut romaine lettuce, carrots, pickled jalapeño, Korean-style barbecue sauce, kimchi all on a sourdough bun.

Customers can also expect a featured seafood dish each day, and an a la carte brunch menu available from 11:30 a.m. until 2:45 p.m. Saturdays and Sundays.

The top-selling beer is the Cashmere Zeppelin, which uses cashmere hops from the thumb of Michigan. The tropical IPA has a fruity flavor to it with a low amount of bitterness.

If customers don’t want to sip on a beer, the brewery has other options on its cocktail menu and even has wines sourced from Michigan wineries.

Salt Springs Brewery, 117 S Ann Arbor St., in Saline, is open 11:30 a.m. to 8:30 p.m. Tuesday through Wednesday, 11:30 a.m. to 9 p.m. on Thursday, 11:30 a.m. to 9:30 p.m. Friday and Saturday and 11:30 a.m. to 8 p.m. Sunday.
